What even is Draft?

I'm Alisa, co-founder of Perpetual Beverages and I like to write blog posts about embarrassing things I did as a teenager.
Starting at 19, I worked summers as a hostess at a popular Bay Area brewpub called Gordon Biersch. One night, a man walked in and cheerily asked if we had any beer on draft. I was lost. What is a draft? Is it a style of beer? Is it a place? How long has this pause been? I opted for the truth, "I don't know, sir, but I can find out." To which he somberly replied. "You have draft beer. I'm Dan Gordon."
Now, and unrelated to my short career in restaurant service, Peter and I started a company that delivers San Diego's best draft beverages. Our beverage list includes cold brew coffee, kombucha, natural sodas, beer, and tea. Let's talk about that "draft" part.

A draft beverage is stored in a keg, the kegs pictured above are called 'sixtels' and they hold 55-70 servings. That's us, holding kegs. Yes, thank you, we are very strong. Pressurized gas is used to push liquid up through tubes leading to taps. When a tap handle is pulled, fresh drink is poured in a quantity of your choosing. In the middle is a photo of one of our keg-mini-fridges with a dual tap setup (one tap for each keg).
This system is how we set up offices with cheaper, fresher, and easier beverages than dropping off a 24-pack of cans. More on that in a future post.

P.S. In our office setup (pictured above), we currently have a nitro cold brew coffee by Bird Rock Coffee Roasters and a tropical probiotic soda by Superfood Company. Any typos in this can be attributed to too much or too little caffine (it's a fine line).
